OK my faithful food followers, I cannot confess that this Doritos with cheesy pulled pork recipe is my healthiest recipe. Nor can I claim it’s my lowest calorie dish, suitable for those on a vegetarian or vegan diet, or great for those trying to keep the cholesterol down.
However, I favour no-one at The Yum Yum Club and try and cater at least a little for all at some point. Today, I have plumped for good old comfort food. Doritos with cheesy pulled pork. A plate full of finger licking, succulent pork with melted cheese and chilli dipped in wonderful sour cream, guacamole or smokey BBQ sauce. Yum!
Doesn’t it look good eh? Believe me, it tastes fantastic. So much so that I did feel a little tiny bit guilty afterwards!! Haha! Luckily, I’ve also posted a good selection of healthy detox smoothies on The Yum Yum Club too, you can find them here ▶, so if you do have a minor guilt attack after this indulgence then don’t worry, you can hedge your bets with a tasty bit of almond milk and pureed spinach!! ????
OK, enough of this nonsense. Let’s indulge…
1. Get the spices together
There’s quite a lot of spices in this recipe but I do urge you do get them all of you can. You’ll be amazed by the aromas after around 10 minutes of the pork being in the oven. The kitchen will smell like a Moroccan Bizarre. Wonderful.
The full measurements for all ingredients are provided in the printable recipe below. However, for this recipe, I used cumin, onion salt, garlic powder, cayenne pepper, paprika, chill powder, salt and ground black pepper.
With the spices measured out, take the brown sugar and add this to a mixing bowl along with the spices. Mix well together.
2. Spice up the pork shoulder
With the spices and sugar all mixed together take the raw pork shoulder and place it in a roasting tray.
Now, take the spice and sugar mixture and pour it over the pork. Using your hands, mix the spices into the pork so that it coats all areas.
With the pork all spiced up transfer it to a large casserole pot. Make sure the skin is facing upwards.
Now, simply add the cider to the bottom of the pot and place the lid on the pot.
Put the whole thing in a pre-heated oven at 160C / 140C Fan and leave. The pork shoulder will take a minimum of 6 hours to cook and, my own personal preference is 8 hours. Just check it every hour or so to ensure the pot isn’t boiling dry. If it does then turn the heat down and add more cider.
3. Pull the pork
After cooking the pork shoulder should look something like this…
Now the fun part… Take the cooked pork shoulder and transfer it to another roasting tin. Do not discard the cooking juices. Next, remove the skin and any fat that remains on the meat.
A little tip for the skin, or rind. If this Doritos with cheesy pulled pork recipe does not have enough calories for you then you can always bang the skin back in the oven and crip it up to make pork crackling. Oh so bad for you but oh so good! Yum!!
OK, back to the pork shoulder. With the skin and fat removed, and using two forks, start to pull the pork meat away from the bone. The key is to pull the meat away such that the result is shredded pork. The end result should be this…
The key now is to keep the pork moist. To do this, take the juice that is left in the casserole pot and skim any fat from the top. Now, add a good glug of smokey BBQ sauce. Heat this through on the stove until it starts to boil. Next, and using a ladle, just pour some of the BBQ pork juice over the pulled pork. Not too much. Just enough for the pork to soak up.
Finally, put some kitchen foil over the pork and place it back in the oven while the nachos are prepared.
4. Finish off the nachos
To finalise the dish first grate the mature cheddar cheese and slice the sweet chilli peppers. Of course, if you want something more spicy than sweet then use hotter chillis.
Now, take the Doritos and lay them in either individual bowls, or one large bowl depending on how you are entertaining.
Take the pulled pork shoulder out of the oven and sprinkle this over the Doritos. Add the peppers and then the grated cheese.
Finally, whack this in the oven for the cheese to melt and serve with dips of your choice. I used sour cream, smokey BBQ sauce and my own chunky guacamole. Yum!
And that’s it my pulled pork perfectionists. Doritos with cheesy pulled pork. Dip them in sour cream or chunky guacamole and you’ll experience a taste sensation that will be difficult to beat. The pork takes a little time to cook but, man, those spice aromas. This is one great cooking experience…

We all know pulled pork nachos but how about tangy pulled pork shoulder Doritos! Tangy cheese Doritos covered in spicy slow-cooked pork shoulder drowned in melted cheddar cheese. Yum! | theyumyumclub.com
- 2 tbsp brown sugar
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp chilli powder
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp ground black pepper
- 10 fl oz cider Metric 300 ml
- 3 large packets of tangy cheese Doritos
- 4.5 lb pork shoulder, bone in Metric 2kg
- 6 sweet chilli peppers

First, measure all of the spices out.

Place the sugar in a mixing bowl and then add the spices and mix together.

Rub the spice mixture all over the pork shoulder and place the shoulder, skin up, in a casserole pot.

Add the cider to the base of the casserole pot and put the lid on the pot.

Place the pot in a pre-heated oven at 160C / 140C Fan and leave for at least 6 hours. 8 is even better. Check occasionally and add more cider if the pot is running dry.

Once the pork should is cooked remove from the pot and place into a roasting tray.

Remove the skin and any associated fat.

Now, using 2 forks, pull the pork away from the bone until you have a tray full of succulent pulled pork.

Skim any oil from the pork and cider liquid and heat on the stove. Add a good glug smokey BBQ Sauce and mix in.

Pour some of this sauce over the pulled pork shoulder to keep it moist. Cover with foil and place back in the oven.

Now, slice the sweet chilli peppers and grate the cheddar cheese.

Lay the Tangy Cheese Doritos into a bowl.

Remove the pulled pork from the oven and sprinkle some over the Doritos. Add some peppers and cheese.

Place the bowl in the oven for the cheese to melt and then serve with dips of BBQ sauce, chunky guacamole and sour cream. It doesn't get much better than this. Yum!
