  • 4 lb pork ribs, bone in, raw
  • 5 cloves of garlic, minced
  • 3 tbsp hoisin sauce
  • 4 tbsp honey
  • 2 tbsp dark soy sauce
  • 1/5 tsp Chinese 5 spice
  • 2 tbsp brown sugar
  • 2 tsp raw ginger, minced
  • 3 hot chili peppers
  • 3 tbsp sesame seeds
  • 4 spring onions
  • 1 tsp red food colouring
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 2 tbsp cornflour and water mixture
  • 1 lemon

Instructions

  1. First, gather all of the ingredients together.

  2. Mince the garlic and ginger and slice the chili peppers.

  3. Place all of the ingredients into a bowl (excluding the pork ribs).

  4. Mix the marinade together.

  5. Place the ribs in a casserole pot.

  6. Cover the ribs with marinade and mix in.

  7. Cover the pot with cling film and leave overnight to marinate.

  8. 5 hours before the ribs are to be served, place in pre-heated oven at 160C / 140 Fan and cook for 5-6 hours.

  9. After cooking, remove the ribs from the oven and place on a separate roasting tray and tip the remaining sauce into a saucepan. Let the sauce settle and then skim off any surface oil.

  10. Heat the sauce and thicken using the cornflour and water mixture. Once thickened, glaze the ribs with the sticky sauce.

  11. Place the ribs back in the oven and cook until the glaze has caramelized.

  12. Remove from the oven and sprinkle with sesame seeds and chopped spring onions.
