Ingredients

  • 2 large eggs
  • 2 smoked haddock fillets
  • 1 avocado
  • 2 slices of thick crusty granary bread
  • 1/2 pint half milk

Instructions

  1. First, gather all of the ingredients together.

  2. Place a pan of water on to boil for poaching the eggs and a skillet of milk for the haddock.

  3. Halve the avocado and remove the stone and skin.

  4. Thinly slice the avocado and leave for now. This will form the fan.

  5. When the milk starts to simmer poach the haddock for 6-8 minutes depending on the thickness of the fillet.

  6. When the fish is halfway through cooking start to poach the eggs and toast the bread. Poach the eggs for 3.5 minutes.

  7. Once the bread has toasted place the fanned avocado on the toast.

  8. Once the fish is cooked remove to some kitchen paper, pad dry and then place on top of the avocado.

  9. Once the egg is poached remove from the water, drain and then place on top of the haddock.
