Place chopped ginger, sesame oil, soy sauce, and sugar in a small bowl.
Mix until fully combined.
Cut tuna in cubes.
Cut watermelon in cubes.
Heat the oil in a small pot and fry the rice noodles until crispy. Remove from the oil and drain. Set aside.
In a bowl, combine tuna and watermelon. Add green onions.
Add sesame seeds.
Pour in the sauce and mix until well combined.
Serve tuna tartar in cups and top with the fried noodles.
