Gather all of the ingredients together.
Crush the biscuits to a crumb.
Now melt the butter in a saucepan on a low heat and add the biscuit crumb and mix. This is a quick activity and you just want to mix the two ingredients together. Be careful not to burn the biscuit crumb.
Next, tip the biscuit and butter mix into a cheesecake tin and spread evenly on the base. Make sure the base is fully covered including the edges of the sides. Place in the fridge and leave to cool and set for 1 hour.
Now whip the think double cream to a smooth texture and set aside.
Next, take the cream cheese and whisk to loosen it up and add the Baileys.
With Baileys mixed in add the icing sugar and cream and mix thoroughly.
Finely grate the chocolate on the smallest grater size.
Now add the grated chocolate to the cream and cheese mix and stir thoroughly making sure the chocolate is mixed throughout.
Now remove the cheesecake base from the fridge and spoon the cheesecake mix on to the base. Spread this evenly over the base and return to the fridge for another 2 hours.
After the 2 hours and once set, and you are ready to serve, just remove the outer cheesecake tray and prepare to see a lot of smiling faces!!
