Parmesan & paprika haddock baked in garlic butter. An amazingly simple recipe and ready in 30 minutes from start to finish. Delicious baked fish. Yum!
Pre-heat the oven to 200C / 180C Fan.
First, gather all of the ingredients together. Roughly chop the parsley, remove the zest and juice from one lemon, and finely grate the parmesan.
Wash the fish and pat dry. Check and remove any remaining bones. Cut into portion sizes as required.
Place the parmesan, paprika, garlic powder, lemon zest and parsley into a mixing bowl.
Mix all of these ingredients together.
Place the butter into a small saucepan.
Melt the butter over low heat. Do not burn. Once melted, mix in the lemon juice.
Next, place the fish portion into the butter.
Now the crust mix.
Cover the whole fish and pat the crust onto the fish with a spoon or fork.
Place each fish portion into a roasting pot.
Add the remaining butter but do not wash the crust off the fish.
Bake the fish for 20 minutes or until the fish texture has become flakey.
Once cooked remove the fish from the oven.
Finally, serve the fish with seasonal vegetables or a fresh and healthy salad.
