This is a relatively short post compared to some of the others here at Thy Yum Yum Club. However, I can tell you that this is nothing to do with the lack of flavour in this recipe. Ricotta, prosciutto and fig crostinis are amazing. Little open toasts of Italian flavour hitting your tastebuds in one enormous explosion. Just look at these beauties…
Ricotta, Prosciutto & Fig Crostini
Simple sourdough toasts with ricotta, prosciutto and figs. However, I’ve added a wonderful extra to these delicious bombs. Drizzle them with honey and a touch of sea salt. That combination of sweet and savoury just makes this ricotta, prosciutto and fig crostini a cut above the rest. Stunning and, I have to say, even better in the sunshine with a drop of rose!! Yum!
So let’s make them…
1. Gather all of the ingredients together
As I mentioned above, this is a simple recipe. Just 5 main ingredients plus a sprinkle of seasoning. All you need is prosciutto, sourdough bread (although any crusty bread will do), ricotta cheese, fresh figs and honey. Easy…
Gather the ingredients together
There’s limited preparation for this recipe. Just slice the figs and I like to take as much of the fat from the prosciutto off as possible. Also, slice the bread ready for toasting.
2. Assemble the ricotta, prosciutto and fig crostinis
The only bit of cooking needed, if it can be called cooking, is to toast the bread. Do this lightly on both sides.
Toast the sourdough bread
Now, using a teaspoon, spoon the ricotta onto the toasted bread and smooth until it covers all of the bread.
Add the ricotta to the crostini
Next is to layer the prosciutto on top of the ricotta.
Layer the prosciutto
Now, add the fig slices. I find two on each slide is about right.
Add the figs
Drizzle with honey and sprinkle with some good quality sea salt.
Drizzle honey over the figs
And that is it, my fine food followers. A simple, non-technical lunch or snack recipe. Ricotta, prosciutto and fig crostini. A taste of Italy in your own garden, especially if your throw in a cheeky glass of wine ????! It doesn’t get more delicious than this. Yum!
