Although there’s nothing quite as good as a freshly baked cake, life may get in the way sometimes, and we might have to keep a fresh batch safe for later. It’s more difficult to keep cupcakes fresh if you bake them ahead of time, and it’s disappointing when you bake cupcakes in advance, only for them to dry out or lose their flavor when you serve them.

It is possible to store cupcakes without compromising their quality with a few simple tricks:

Cool cupcakes completely before Storing

Putting warm cupcakes in an airtight container will cause them to release steam. As a result, cupcake tops will be sticky (which will make it hard for the frosting to stick), and cupcakes will peel away from their liners (which isn’t very fun).

You should let just-baked cupcakes cool, uncovered for at least one hour after removing them from the oven. Cupcakes must be completely cool before storing them.

Instead of using a plate or cutting board, I recommend using a wire cooling rack to cool cupcakes. Wire racks are inexpensive, and they help prevent cupcake bottoms from getting soggy or steamy by allowing air to circulate around them while they cool.

For example, in hot and humid weather, if your cupcake’s frosting is melting, it is best to put them in the refrigerator and bring them back to room temperature before serving. We don’t want dry, dense cupcakes when they’re cold.
