Bacon, Brie and Cranberry Sarnie

Hey there my Foodie Friends!! This morning I make no excuses. I woke up hungry and just felt like a little calories intake. The blueberry yoghurt was ignored, the fresh melon balls were moved to the back of the fridge, and the Actimel live bio health drink was, well, out of date! Haha! What jumped out at me was that beautiful back bacon and brie!! “Oh yes”, I thought “Yum Yum!”. Maybe a little cranberry as well…Cue the bacon, brie and cranberry sarnie!!

Bacon, brie and cranberry sarnie – no excuses

Now, it’s a simple sandwich, or sarnie. I wanted one. Jen wanted one. So we had one each. As said above, I make no excuses for eating it. Haha! And no excuses for the pretty basic photographs. In fact, I was in two minds about even posting this but it was so good I just wanted to share the love ❤.

As always the printable recipe is below and I will also talk you through it first. However, let’s not over-egg this (no pun intended), it is exactly what it says in the photograph. Toast, bacon, brie, and cranberry jam. Easy and just fantastic!!


1. Grill the bacon

That’s it! Grill it crisp. Three back rashers per sandwich. Once grilled keep warm in the oven,

2. Toast the bread

While the bacon is keeping warm, and the grill is still hot, toast the bread on one side. I used some freshly baked sourdough bread but use whatever you like. No Michelin Star here my friends. It’s just a bacon, brie and cranberry sarnie.

Toast the bread on one side only

3. Add the bacon and cranberry jam

With the untoasted side facing up lay the bacon on one side of the sandwich and the cranberry jam on the other.

We’re getting there…

4. Add the brie and melt

Now the scummy bit. Lay the brie over the bacon and bang back under the grill. Just to make the brie soft and melt a little.

Melt the brie over the bacon

5. Make the sarnie and enjoy

Finally just put the sandwich together and enjoy. A bacon, brie and cranberry sarnie. Set’s you up for the day!!

Bacon, Brie and Cranberry Sarnie
Course: Breakfast, Brunch, Lunch
Cuisine: American, English

Servings: 2 sandwiches
Ingredients
  • 6 rashers unsmoked back bacon
  • 4 slices freshly thick sliced crusty bread
  • 2 thick slices of brie cheese
  • 2 dessert spoon cranberry jam
Instructions
  1. Grill the bacon until crispy and place at the bottom of the over to keep warm.

  2. Toast one side of all slices of the bread.

  3. On the untoasted side of 2 slices of bread lay3 rashers of bacon each. On the other 2 slices of bread spread one dessert spoon of cranberry jam on each.

  4. Lay the brie over the bacon and pop bag under the grill to melt.

  5. Make the sandwich and enjoy!!
