This is a wonderfully tasty recipe and a fantastic alternative to boring boiled potatoes mixed with a little mayonnaise. Classic Bavarian potato salad with bacon mixes boiled potatoes with traditional white wine vinegar which gives a yummy pickled taste. Add this to the salted bacon and we have a winner. I serve this alternative potato salad cold at home BBQs as a compliment to succulent sausages. You can, however, cook when needed and serve warm as a potato side dish to any main course. What’s more, it’s very easy to make as I’ll show you now…
1. Gather all of the ingredients together
There really is little to this tasty side dish. Potatoes and bacon, obviously, and then just some white wine vinegar, onion, sugar, parsley, and seasoning.
One quick note regarding the bacon, I use unsmoked back bacon but only because I’m not a big fan of smoked. Traditionally, however, classic Bavarian potato salad with bacon uses smoked streaky, or side bacon. My advice is to just use whatever it is that you like best.
2. Prepare the ingredients
There is very little preparation for this recipe. Just peel and dice the potato, dice the bacon and onion, and roughly chop the parsley.
3. Make the classic Bavarian potato salad with bacon
To make the salad start by placing the diced potato in a saucepan and covering with water.
Now, put the pan on a stove and heat until the water boils and simmer for around 10 minutes, or until the potato is easily pierced with a fork. Once cooked, drain and leave on the side to cool.
Next, fry the bacon in a pan until it turns crispy and then remove from the pan to cool. Keep the pan and do not wash it.
Using the bacon pan, heat over medium heat and add the onions. Add more oil if needed and fry the onion until they start to brown.
Now, add the white wine vinegar, seasoning, sugar and a couple of tablespoons of water and mix in the onions. Now add the potatoes.
Stir the potatoes in and then add half of the bacon and parsley and stir in.
Cook this through until most of the liquid has reduced.
Now spoon the classic Bavarian potato salad with bacon onto a serving dish and sprinkle over the remaining bacon and parsley. Serve straight away as a warm dish or leave to cool and serve as a salad later in the day.

- 3 baking potatoes, peeled and diced
- 4 bacon slices, diced
- 1 onion diced
- ¼ cup white wine vinegar
- 2 tbsp water
- 3 tbsp sugar
- 1 tbsp parsley, chopped
- Seasoning

First, gather all of the ingredients together.

Prepare the ingredients by peeling and dicing the potato, dice the onions and bacon, and chop the parsley.

Add the diced potato to a pan and cover with water. Boil for 10 minutes until the potato softens and then strain and set aside to cool.

Using a frying pan add the bacon and fry until crispy then remove from the pan and set aside.

Using the same pan as for the bacon, fry the onions until they start to brown.

Next, add the white wine vinegar, water, sugar, and seasoning.

As soon as the liquid start to simmer add the potato and half of the bacon and parsley. Stir this in and allow the liquid to almost full reduce.

Once the liquid has almost gone spoon the potato salad into a serving dish and add the remaining parsley and bacon.

Serve hot or cold and enjoy this classic Bavarian potato salad with bacon. Yum!
